Keep raisins and rum mixed in a bowl for half an hour.
Preheat your Kenstar OTG to 160℃, and grease the cake pan with butter or oil.
In a bowl, add butter, vanilla, and sugar. Beat the ingredients so that it becomes a thick and pale paste.
Add eggs to the bowl one at a time. Beat a little after adding each egg.
Add flour, cocoa powder, and a little salt to the bowl through a sieve and mix the ingredients.
Take 1/3 part of the flour mixture in a mixer, and add the half cup of buttermilk. Beat the mixture at low and medium speeds until the mixture becomes smooth.
Drain the raisins soaked in the rum, and add 2/3rd of the raisins to the batter. Pour the batter into the greased pan.
Bake the cake in the Kenstar OTG
for around 40 minutes. Check if the cake is completely baked by placing a skewer in it; make sure it comes out with some moist crumbs.
Once the cake is ready, remove the cake from the Kenstar OTG and cool it for 10 minutes.
Add ¾ cup of sugar to a saucepan, add two tablespoons of water, and place the pan on medium heat. Once it boils, simmer it for 8 minutes on a low flame, until the colour changes to golden.
Add ¾ cup of cream and a little salt to the pan. Keep stirring the ingredients until the mixture becomes smooth.
Cool it a little before adding 2 tablespoons of rum, and then keep it to the side to cool it completely.
Add 500 gm cream cheese and 50 gm butter in a bowl, and then whisk the mixture to make it light and fluffy.
Whisk with medium speed and add a cup of icing sugar, a tablespoon of rum, and a pinch of cinnamon and nutmeg.
Cut the cake into two halves. Brush both the parts with the rum leftover from the soaked raisins.
Spread 1/4th part of icing over one half of the cake. Now, place the second half of the cake and spread the remaining icing over it.
Finally, drizzle the caramel and sprinkle the remaining raisins.
