Take cardamom, black peppercorn, and saunf in a mixer grinder and grind them together until it turns into a uniformly smooth powder. Make sure that you peel the cardamon and add its seeds to the jar.

Take the masala mixture out and add almonds, cashews, poppy seeds, pistachio, and melon seeds and grind them to make a fine powdery mixture.

Mix the nut powder and masala mix and then add rose petals in it. You can also add a few drops of rose water to the mixture but try not to turn it into a paste as it wouldn’t mix in the milk properly. This is enough mixture for preparing 14-15 servings of the delightful cold and sweet Thandai beverage for your guests.

Add milk to a deep bowl and let it boil on medium flame. After it starts boiling, add a few saffron strands to the milk and then stir with a spoon. Now add sugar to the milk while stirring it continuously.

Now add Thandai mixture in the milk using a spoon at a time while the flame is low. Stir the milk slowly and keep adding till the colour turns beige. Let it cool for at least 2 to 3 hours, and then sieve it through a fine strainer.

Serve with your favourite cashew and almond toppings!
