Easy Microwave Soup Recipes To Beat The Winter Chills

What seemed like an endless summer is finally giving way to winter’s chill in India. The winter season is associated with many delightful cosy memories. The warm winter sun, soft jumpers, and snuggling up with a hot drink are just a few perks of winter. Another delightful offering during the colder months is the comfort foods like delicious warm soups to combat the chills.

Here’s a list of three favourite winter soups with easy steps for microwave preparation:

1. Tomato and Basil Soup

Tomato and Basil Soup

Ingredients

  • 1 tablespoon oil
  • 1 chopped onion
  • 1 chopped celery stick
  • 1 finely chopped carrot
  • 1 teaspoon sweet paprika
  • 2 tablespoons tomato purée
  • 1.25 kg tomatoes quartered (without the central cores)
  • 1 tablespoon sugar
  • 1-litre vegetable stock
  • 1 tablespoon green pesto
  • A handful of fresh basil leaves

Method

  1. Add oil, onion, carrot, celery and paprika in a large bowl
  2. Cook on a high microwave for 5mins.
  3. Add tomato purée, tomatoes, sugar and hot stock to the bowl
  4. Cook on medium microwave for 15 mins
  5. Leave the bowl to cool
  6. Season to taste.
  7. Cover and cook on medium microwave for 3 mins
  8. Garnish with a swirl of pesto and basil leaves

2. Spinach Soup

Ingredients

  • 3 cups of spinach
  • 2 tablespoon all-purpose flour
  • Salt as required
  • 2 tablespoons butter
  • 1/2 cup milk
  • Powdered black pepper as required
  • 2 tablespoon fresh cream

Method

  1. Wash the spinach leaves thoroughly
  2. Bunch and cut off the thick stems
  3. Place the spinach leaves on a micro-safe plate and put in the microwave
  4. Cook them at high microwave till the spinach gets well cooked
  5. Set aside to cool
  6. Blend the cooled spinach till well pureed
  7. Add butter to a microwave dish and melt it at high microwave for 30 seconds
  8. Add all-purpose flour and some milk. Mix well till it turns into a fine paste
  9. Add the spinach puree, the rest of the milk, salt and pepper and mix them well
  10. Cook the soup on high microwave for 4 mins (stir it once after 2 mins)
  11. Garnish with fresh cream

3. Carrot Soup

Carrot Soup

Ingredients

  • 2 tablespoons unsalted butter
  • 1 large chopped white onion
  • 1 kg carrots, peeled and chopped
  • 3 chopped garlic cloves
  • 1 teaspoon dried thyme
  • 4 cups vegetable stock
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper (optional)
  • 4 tablespoons heavy cream, divided
  • Paprika
  • Fresh chives, minced

Method

  1. Add butter and onions in a large pot over medium microwave for 3-4 mins
  2. Cook until onions turn translucent but not brown
  3. Season with a pinch of salt
  4. Add carrots, garlic, and dried thyme, and stir
  5. Cook for 30 secs until garlic becomes fragrant
  6. Add stock and bring mixture to a simmer
  7. Cover for 15 minutes till carrots turn tender
  8. Use an immersion blender to blend soup until smooth
  9. Season with salt and white pepper (optional)
  10. Garnish with a sprinkle of paprika and fresh minced chives
