Being stuck at home certainly makes you miss all the fun activities that we used to enjoy outside. And one of those activities was gorging on delicious street food. Since the lockdown forced us to prepare our meals, the options have been limited for some. We are caught between the need to eat healthily and our longing for devouring street food. Well, today we are going to explore a lip-smacking recipe that combines both aspects. And it can be prepared at home with ease.
One of the favourite snacks for many, Bombay Veg Sandwich is easy to make and is filled with flavours. In Mumbai, it’s the staple in most sandwich stalls and is a crowd favourite. Everything from the coriander chutney to the veggies and toast makes your mouth water from just the thought of it. So here is an easy recipe you can prepare at home for breakfast or evening snack.
Fresh bread of your choice. Whole wheat bread is a healthier option.
Vegetables of your choice along with potatoes, tomatoes, cucumber and onions. Use boiled beetroot, capsicum, etc. to make it more healthy
Salt & Pepper
Add a bunch of coriander leaves in a chutney grinder jar, then add ½ tsp chaat masala powder and 1 to 2 green chillies (chopped).
Add a pinch or two of salt.
Blitz the ingredients in a mixer grinder till smooth.
Add a little water if necessary.
Chutney is ready. Keep it aside for
immediate use or else refrigerate.
Boil 1 medium beetroot and 2 small to medium potatoes in a pressure cooker.
Cook till 2 whistles.
Chop them in rounds once they’re not too hot to touch.
Thinly slice 1 medium tomato, 1 small to medium onion and
1 medium cucumber.
Take bread slices and spread butter evenly on them followed by the green chutney.
Place a few slices of potatoes and sprinkle one to two pinches of chaat masala
Place a few tomato, cucumber and onion slices over the bread. Sprinkle one to two pinches or more of chaat masala.
Place the rest of the vegetable slices like capsicum and beetroot and sprinkle chaat masala again.
Cover the vegetable topped slices with the remaining prepped slices. Spread butter on top.
Preheat your sandwich maker grill.
Gently place the buttered side facing the bottom of the grill. Now spread butter on the top side.
Close the grill and your sandwich will be ready in 2-3 minutes till golden brown.
Serve hot with ketchup and chips.
